Brown Rice w/Dried Apricot & Scallions Recipe
Serves 6-8
2 Packages “Success” Boil–in-Bag whole grain brown rice/Substitute 2 cups of any cooked brown rice (if unable to use “Success”.)
1 Tablespoon “I can’t believe it’s not butter or other butter substitute (optional)
½ Cup Sliced Dried Apricot (chilled or frozen easier to cut)
2 Scallions diagonally sliced (green onions cut – green and white parts)
2 Tablespoons of Liquid Amino (or low Sodium Soy Sauce)
Black Pepper to taste
Prepare rice according to package directions, drain and place into a Teflon coated skillet while hot. Add butter, dried apricot, scallions, liquid amino and pepper to taste. Serve Hot
